That was in a tiny kitchen in Portland at 7:15 PM, with takeout menus open on the counter.
The first attempt was a blog post: a single, over-shared dinner where she documented every misstep. The response wasn’t just praise—it was *relief*. People wrote in saying they’d given up on cooking entirely, or that their go-to recipes had stopped working. The missing piece wasn’t skill; it was trust.

Bridget Mensah is the founder and editor of *Salad Recipes Herb*, and her work here is shaped by a childhood spent in her mother’s kitchen—where meals were made from whatever was on hand, not whatever was ‘supposed’ to be used.
She still keeps a handwritten list of her mother’s ‘emergency’ recipes on the fridge, dog-eared from years of reference.
Before this site, she spent a decade in food publishing, where she noticed a pattern: recipes that looked stunning in photos but fell apart in real kitchens.
Her desk is always cluttered with sample ingredients, a coffee mug that’s seen better days, and a timer set for 30 minutes—no matter how long the recipe actually takes.
I still mess up the first time I try a recipe—it’s how I know it’s real. The goal isn’t to make it perfect; it’s to make it *work* for you. If a dish doesn’t hold up by the third reheat, we’ll scrap it.

How we create our content

Every recipe begins with a problem: a dinner that got canceled, a lunch that needed to be ready in 20 minutes, or a dish that sounded good but turned out bland.
We don’t start with a blank slate—we start with the constraints of real life: the time you have, the ingredients you’ve got, and the energy you’re willing to spend.
Testing the basics
The first step is testing the core of the dish—usually the dressing, the protein, or the base—before anything else. If the vinaigrette separates after 10 minutes, or the chicken dries out by the second bite, we don’t move forward.
This happens in a real kitchen, with real light, and always with a timer running. No shortcuts here.
We make each component at least three times, adjusting seasoning, cooking times, and techniques until it’s foolproof. The clock rarely stops before 90 minutes, and the counter is usually sticky with olive oil by the end.
Refining the details
Once the foundation works, we test the full dish—twice. The first time is for structure: does the salad hold together? Does the pasta not turn to mush? The second time is for flavor, where we tweak spices, swap ingredients, and check for the ‘wow’ factor.
If a recipe doesn’t pass both, it doesn’t get published.
The final version is always tested one last time by someone who’s never cooked it before. If they can’t replicate it without calling for help, we go back to the drawing board.
